First off, Great choice finding at the Bradley Smoker!

I have a barrel smoker I have used for a few years and I needed to get something to make my life a limited easier so I could smoke over night and not have to get up every hour to add wood.

The Bradley Smoker 4 Rack is an awesome tool backed up by an awesome company. I have had mine for about a year now. I have smoked, ribs, brisket, pork butts, and cold smoked cheese. I have chicken wings, pork belly, and other meats lined up for the rest of this summer.

I do not recommend the digital smoker as it resets itself every 10 hours or so and requires you to unplug and restart. The former Bradley Smoker has a sliding knob at the bottom that is used to control the heat. Regularly you start out at max and leave it there for a while. After a time you will need to move it over an inch to set the temp.

Yes you do need to buy special briskets from Bradley but they are on sale here at Amazon and else where most of the time. I purchased one box of each flavor and have not needed to resupply in months and I do a lot of smoking.

Check out BradleySmoker.com and their forum and see for yourself. Great Product, Great Company! There is also a 6 rack/shelf unit out there and some come wrapped in stainless steel for a nice look!

The one and only downside to this smoker, it does not yield a smoke ring. There is Nothing missing from the flavor but there is no smoke ring. My explication to that is beginning meats in my barrel smoker for a consolidate hours then moving it to the Bradley Smoker for an overnight cooking!

We gave it a shot anyways and it smoked a 10 pound butt in 8 hours (should have been 12). I called Brinkmann and they offered to send me a new heat element but I decided this was the wrong smoker. Also you place the wood on top of the lava rocks next to the heater, not only did I have to get someone else bag of wood chunks about 4 hours in, it's a pain the clean the ash mixed with the lava rocks. I supplanted it with the Brinkmann Verticial galvanic Smoker, it was about twice the price and twice the value.

Great correction of a great product! : Weber 721001 Smokey Mountain Cooker 18-1/2-Inch Smoker

I bought this smoker after allembracing research. I have always been the "grill master" in my family, but never invested in a smoker. After using the Weber website and a few other websites dedicated to smoker cooking, I was able to successfully smoke 2 whole chickens the first time! The chickens were moist and had the most delicious, delicate, smoky favor!

I was so inevitable in my skills that a few weeks later ( and after much research) I had a Bbq at my house and smoked 15 lbs of chicken, 4 slabs of ribs, and 2 pork shoulders! I had to stay awake most of the night before (off & on), but the thermometer and the ease of use in adding charcoal made it very easy... I received rave reviews for my meat at the Bbq the next day!

If you're in the shop for a smoker- this is it! It's great for everyone- experienced or newbie- it's worth the money 2x over!!!

P.S.- I didn't bother with a lot of the extras but the following items were invaluable. I used paraffin cubes that worked wonders!!! (non-toxic/no taste- found at Lowes) Also, If you're planning on ribs- spend $15 in a standing rib rack- you can stand 4 slabs up at a time- conserving space while not compromising on taste...

Technically it should be hands off. More on that later. It is made in the Orient and resembles one of those small uncostly refrigerators faultless with plastic trim. The interior is lined with very thin gauge Stainless Steel, and has 4 thin gauge racks. It is fairly light weight especially without the smoke generator attached. Assembly was fairly level transmit and is easy to move around. The smoke generator uses lightly packed disks consisting of small wood chips. These are distributed by Bradley in various wood types. The smoke generator heats them individually on a small plate until they smoke. After 20 minutes other is indexed into place, pushing the used up bisquette as a blackened disk into a water tray, just short of rendering it to ashes. A tubular magazine holds adequate bisquettes to last for many many hours. The main issue I have with it is it's very poor temperature control. The key to smoking meat is to keep the temperature low and slow. This unit struggles with that, deviating considerably from the set temperature, specifically going higher. There is a 500W heating element in the smoke tower that comes on once the thermostat drops 10 degrees below the set temperature. The actual temperature in the smoke tower rises rapidly once the heater comes on but the thermostat lags way behind, allowing the actual temperature to rise well above what is desired. The temperature could be some 40 degrees or more above the thermostat reads. This is an especially serious qoute if you are using a sugar based rub, because it will start to burn above 240 to 250F. Not to mention the fact that the meat will cook too rapidly. Also being that the smoke tower has so limited mass there isn't much to hold the heat, so opening the door to check on the status or baste causes the temperature to drop rapidly. The other issue I have is that after 3 hours of smoking, I was surprised to see that the meat showed limited evidence of smoking. The taste was there somewhat but seemed weak. In my final prognosis I would say you get what you pay for. Conceptually it has a lot to offer, and it's construct seems very well plan out, but in custom falls short. With just a limited more endeavor in the way of a best thermostat it would be immensely better. Also I'm not convinced it needs a 500W heater, it's potential a 250W unit could keep up and heighten heat versus thermostat control.
